Think back to the late 1970’s. That’s when chia seeds were first introduced to many of us. They were the magic ingredient in the hugely popular ‘chia pet’.
Yep. You could have your own little teddy bear/puppy/kitten chia pet. It promised to grow rich, lush, green fur in 1 – 2 weeks on the kitchen window sill. The only maintenance the ‘pet’ needed was a little mow every now and then.
The thought of actually eating the seeds was well…unthinkable.
THE MODERN CHIA SEED
I’ve been on the chia seed bandwagon for a year. I love these little morsels. They give me the energy boost I need for my 8 am workout.
I normally add 3 tablespoons of chia seeds to my morning oatmeal. I recently tried something new and it’s soooo good. Even ‘husband’ who is often a raw/green/vegan/vegetarian food skeptic put a big stamp of approval on this one. “What the heck is this?” he said, “it’s gooooood!” It has a secret ingredient in the pudding mix – fresh spinach.

It takes about 5 minutes to prepare and needs at least an hour in the fridge before serving.
GREAT GREEN CHIA PUDDING
2 servings
INGREDIENTS
3 medjool date, pit removed *note if you can’t get medjool dates use 6 regular dates
2 cup non-dairy milk (organic soy, almond, coconut, cashew)
2 handfuls fresh spinach
6 tbsp chia seeds
Fruit for topping (mango, berries, cherries, kiwi, banana)
METHOD
- In a high speed blender blend the date milk and spinach until very smooth
- In a medium bowl add the liquid to the chia seed
- Stir well, and continue stirring every few minutes for about 15 minutes.
- Place in fridge for at least I hour or overnight
- Just before serving, stir again, and top with fruit.
