It’s soup season! This is a hearty soup inspired by Indonesian gado gado sauce is fragrant and spicy with ginger and cayenne, rich with peanut butter, nutritionally packed with cabbage, sweet potatoes and sprouts. It’s a perfect meal for YUMMY AGERS. See YUMMY AGING benefits below.
INDONESIAN SWEET POTATO & CABBAGE SOUP
Serves 4
1 tablespoon grated peeled ginger root
4 cloves of garlic, minced or pressed
½ teaspoon cayenne
1 tablespoon coconut oil
1 ½ cups chopped onion
½ teaspoon salt
2 ½ cups shredded or chopped cabbage
2 ½ cups diced sweet potatoes
1 quart vegetable broth (cubes or powder)
½ cup peanut butter
1 cup chopped tomatoes
1 tablespoon tamari
2 cups bean sprouts
For garnish – chopped cilantro, sliced scallions, chopped mint and/or Thai basil
(optional) ½ teaspoon dried chilies
In a soup pot on medium heat, cook the ginger, garlic and cayenne in oil for a minute before adding the onions and salt. Cover and cook, stirring often, until the onions soften, about 5 minutes.
Stir in cabbage and sweet potatoes. Add 3 ½ cups of broth. Cover and increase heat to bring to a boil. Reduce heat and simmer for 15 minutes.
In a bowl, whisk together the peanut butter and remaining ½ cup of broth until smooth. Add peanut butter mixture to soup with tomatoes and tamari. Simmer uncovered until all the vegetables are tender, about 5 minutes.
Serve each bowl topped with bean sprouts, cilantro, scallions, mint and/or basil.
*I sprinkle dried chilies on top—may be too much for some palates!
